Winemaker's Notes
Petite Sirah is the flagship varietal of the EOS Estate winery. Although originally from France, Petite Sirah along with Zinfandel is considered a “California” grape with an American heritage, and EOS is one of the major grower-producers with 88 acres planted. Petite Sirah and the Paso Robles terrior are a perfect match. For finished complexity, nuance and intensity, you want the grapes to get very ripe, and you need long hang time for this. Paso Robles has a very warm climate and doesn’t get the late-season rain storms like Napa. The clay soil of Paso Robles is also critical. Petite Sirah tends to throw off a lot of crop, and pruning alone is not sufficient to address this. The clay soil of Paso Robles holds the nutrients tight, almost in a “time-release” fashion, so canopy and vegetation are not overproduced. We aged this wine for 22 months in primarily new french oak to mellow the pronounced tannin and marry the complex components.

This wine opens with intense aromas of plum and berries, followed by tobacco, oak, tar, and smoke. The flavors of dark plum, blackberry jam, and blueberry fill the palate, and are augmented by lingering notes of roasted oak, earth, tar, and dry, spiced tannin.

Food Pairing: Serve at cellar temperature with robust meat dishes, especially roasted or grilled wild game or lamb chops with rich sauces. Enjoyable now or cellar up to 12 years.
